Dining at Nimb

Dining at The Nimb is held in great reverence, and is an integral component of the hotel. At Restaurant Nimb, all three kitchens are placed in the middle of the restaurant, allowing the chefs to demonstrate their skills to the diners. In this transparent environment, the craftsmanship and high quality ingredients speak for themselves. Here, the seasons dictate the ingredients and dishes on the ever-changing monthly menu. The only thing that doesn’t change is the quality. Meanwhile, The Nimb’s other eatery, The Restaurant Herman, was recently awarded a Michelin star in March 2009. Named for passionate and talented executive chef Thomas Herman, this great restaurant serves up traditional Danish dishes with Herman’s own unique and innovative twists. Situated in a space that used to serve as a ballroom, the absolutely cavernous Nimb Bar offers the grandeur of an international hotel lobby while still maintaining the atmosphere of a cozy lounge. This is a great place to go for an aperitif before dinner, or to stop by for a cocktail after a night out at a concert or show. Feel free to unwind in front of the majestic fireplace with a glass of Sancerre or a carefully created cocktail. Underneath The Nimb lies the Vinotek, a veritable ‘wine library’ where the storing, handling, and presentation of wines is a work of art in itself. The Vinotek is a welcoming and approachable destination for all wine lovers, regardless of experience. Here, you are able to sample your way through Denmark’s largest collection of wines. Glass by glass of even the finest vintages can be enjoyed to the fullest without having to take on a full bottle of wine. Snacks like cheeses and cured ham are also on hand.
