Kim Tran and Nguyet Nguyen prepare Vietnamese classics, and Kim's nephew Phuong Tran incorporates the French techniques he learned at Campanile. Dishes include pan-seared salmon topped with cilantro aïoli and flash-fried salted shrimps with soybean oil and ginger strands.
